The Adelaide Hills Wine Bar is not family owned. It is incorporated by the Wolf Blass Foundation, the not-for-profit established by Wolfgang Blass AM to support education, research and the future of the Australian wine industry.

Everything poured and served here sits alongside the Wolf Blass Gallery & Wine Museum in Hahndorf — the reason the doors are open. The bar exists to bring people into the collection: the trophies, the cooperage, the bottles and the story of a man who changed the way Australia makes and drinks wine.

The Wolf Blass Gallery & Wine Museum in Hahndorf holds the trophies, the cooperage, the bottles and the working life of Wolfgang Blass AM — the man who taught Australia to blend. Free entry, every day we are open.

Wolfgang Blass AM

Born in Stadtilm, Germany in 1934, Wolfgang Franz Otto Blass trained as a cellar master in Europe before arriving in South Australia in 1961 with a suitcase, a diploma and, as he tells it, very little else.

He founded Wolf Blass Wines in 1966 in a tin shed at Nuriootpa in the Barossa. Within a decade he had won the Jimmy Watson Memorial Trophy three years running — 1974, 1975 and 1976 — an achievement no winemaker had managed before and one that changed how Australians thought about their own red wine.

His conviction was simple and relentless: wine should be blended for flavour, not for postcode, and it should be a pleasure to drink young. Bow tie, blend and all, he made Australian wine confident.
